I had a big craving for some mac and cheese this weekend. I figured it would be a good lunch/dinner for this week. In an effort to make a slightly healthier version I decided to try and make a vegan mac and cheese. I found an awesome youtube show called Cooking with The Vegan Zombie. He makes some pretty tasty looking recipes and it doesn’t hurt that he is easy on the eyes. 😉 You should check out his channel out if you are looking for vegan versions of some of your favorite dishes. I added broccoli, carrots, and smart bacon to mine. I have to say I thought it was pretty freakin’ yummy. Way better than the Amy’s vegan mac and cheese you can buy in the frozen food section. Even my sweetie (a non vegan) liked it. Here is my modified recipe:
Vegan Zombie Mac and Cheese
Based off the recipe by Vegan Zombie
- 1 lb elbow pasta
- 1/4 cup flour
- 1/4 cup canola oil
- 2 cups soymilk
- 1 1/3 cup Daiya cheese (feel free to mix a little of each flavor)
- 2 tbsp mixture of dried onion, garlic powder, and dried thyme
- 2 large carrots, cut into half moon shapes and steamed
- 1 1/2 heads of broccoli, cut into florets and steamed
- 4-6 slices of Smart Bacon , cooked and chopped
- vegan bread crumbs
- salt & pepper
Preheat oven to 350 degrees.
Boil water for pasta. Cook pasta about 1-2 minutes less than package recommends.
Meanwhile heat canola oil over medium heat. Whisk in flour. Let cook a couple minutes and add soymilk and bring to boil. Add salt & pepper, spice mixture, and cheese. Stir together. Taste sauce and adjust seasoning.
Strain pasta and put back into pot. Add Smart bacon (save some for the top), steamed vegetables and pour melted cheese sauce over pasta. Mix and place in greased glassware dish. Add breadcrumbs and remaining smart bacon. Sprinkle paprika on top. Place in oven for 20 minutes.
