The boy and I had a pretty chill Sunday. Ran some errands and went to the grocery store, followed by some corn hole in the living room (since it is freezing outside). I had been craving tater tots all weekend. So we decided to make tater tots, nacho style. Totally unhealthy, but sinfully delicious.
Nacho Tater Tots
- 1 package frozen tater tots
- 1 can vegetarian chili beans, drained and rinsed
- 1 1/2 cups shredded Colby jack cheese
- salsa to taste
- sour cream to taste
- 3 green onions, sliced
Line a baking sheet with foil.Cook tater tots according to package directions.
Top tater tots with beans, cheese and salsa. Put back into the oven until cheese is melted and beans are warmed through. Top with green onions and sour cream. Serve.
