Roasted Asparagus

Last week was sort of a lazy week in terms of cooking. I went to the store and bought a couple packages of veggie burgers and the fixings. I was looking for a healthier side than fries or potato chips. I came up with the idea to roast some kind of vegetable. I ended up settling on roasted asparagus because I haven’t had it in awhile and quite frankly asparagus is delicious.

This recipe is a great side for just about any dinner, and it is really easy. Plus it only requires 4 ingredients.

Roasted Asparagus

  • 2 bunches asparagus
  • olive oil
  • salt and pepper

Preheat oven to 350 degrees.

Wash asparagus, and snap off fibrous ends. Place asparagus on a lined baking sheet and drizzle with olive oil. Season with salt and pepper, to taste.

Roast for about 25 minutes or until desired softness.
