I was making dinner for a couple of my wonderful friends on Saturday night. This is one of the first times I have had to really deal with making vegan/vegetarian food for someone that really isn’t into vegan food. I ended up roasting some potatoes, steaming some green beans and sautéing up some tofu. I wanted a sweet but slightly healthy finish to my meal. So I went for a banana pudding. I added some vanilla wafers, but if you wanna keep it vegan, you could always add some vegan cookies or completely leave the cookies out. And best part about this recipe? It actually tastes like bananas!
Based on a recipe by Yummly
- 3 bananas, sliced roughly
- 17oz silken tofu
- 1 teaspoon vanilla extract
- 2 tablespoons raw sugar
- vanilla wafers or vegan vanilla cookies (optional)
Combine all ingredants in the food processor or blender and pulse until mixture is very smooth.
Place small amount of pudding into serving glasses then place a couple vanilla wafers/vegan cookies on top. Then top wafers with remaining pudding. Refrigerate until ready to serve.
