Vegan Caesar Salad with Homemade Croutons

I have been craving a caesar salad like nobody’s business. It isn’t the most healthy salad but I can’t help but love that creamy dressing. This salad really hit the spot this weekend. The boyfriend and I even added some lemon pepper tempe to the mix.

This salad is a great date night dinner, or a quick lunch. The hardest part is waiting for the croutons to finish cooking. It made the whole apartment smell like garlic, yum!

Vegan Caesar Salad with Homemade Croutons

Dressing based on a recipe by About.com

Croutons

  • 6 think slices ciabatta bread, cut into bite size pieces
  • 2-3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • salt and pepper, to taste

Preheat oven to 300 degrees.

Combine oil, garlic powder, salt and pepper in a bowl. Add bread and toss until bread is evenly coated. Spread out bread on a baking sheet in a single layer.

Bake for 20 minutes or until lightly browned.

Caesar Dressing

  • 3 cloves garlic
  • 1 tablespoon lemon juice
  • 1 teaspoon vegan worcestershire sauce
  • 1 teaspoon onion powder
  • 1 teaspoon Dijon mustard
  • 1/2 cup olive oil
  • dash salt and pepper
  • 1/8 cup vegan parmesan cheese (optional)

Place all ingredients except oil and cheese, in a blender or food processor. Turn the machine on, and slowly add the oil, processing until dressing is smooth and creamy. Taste and adjust seasoning. Stir in vegan parmesan cheese.

Toss with romaine or other favorite lettuce. Top with croutons and anything else your heart desires and enjoy!
