Chocolate Chip Banana Muffins

I have had a bit of a sweet tooth lately. And it can’t get a whole lot better than a chocolate and banana combo. Maybe this is a better dessert than breakfast, but sometimes we have to treat ourselves, right?

Chocolate Chip Banana Muffins

  • 2 cup unbleached, all-purpose flour
  • 1 1/2 teaspoons. baking soda
  • 1/2 teaspoon salt
  • 1/4 cup sugar (organic)
  • 1/3 cup vegetable oil
  • 4 ripe bananas, mashed
  • 1/4 cup water
  • 1 teaspoon vanilla extract
  • 2/3 cup non-dairy semisweet chocolate chips
  • 1 cup chopped walnuts

Preheat oven to 350 degrees and lightly grease muffin tins.

In a medium-sized bowl, mix flour, baking soda, & salt together.  Set aside.

In a large bowl, beat sugar & oil together.  Next, add the bananas and mash together. Add water, vanilla and mix thoroughly.

Add the flour mixture, along with the chocolate chips & walnuts. Stir till combine.

Fill each muffin tin 3/4 full with batter.  Bake for 20-25 minutes, until muffins are golden brown & a toothpick inserted into the center comes out clean.
