No-Bake Energy Bites

I was on good old facebook and my friend Ashley posted a picture of these. They looked awesome, so I asked for the recipe. She was kind enough to share the recipe with me. I, of course modified it slightly to prepare for the future of being vegan. This a super easy recipe and great for an on the go snack. I am not gonna lie I ate a couple for breakfast this morning and Mmmm!

No-Bake Energy Bites

  • 1 cup oatmeal
  • 1/2 cup peanut butter (or other nut butter)
  • 1/3 honey (I used agave nectar instead)
  • 1 cup coconut flakes
  • 1/2 cup ground flaxseed (just ground my own in a spice grinder)
  • 1/2 chocolate chips (I used vegan chocolate chips, Ashley used crasins)
  • 1 teaspoon vanilla

Mix everything in a bowl and refrigerate for 30 minutes. Then roll into balls (I used a small ice cream scoop, made portions super easy). If you use agave nectar your mixture may be slightly more sticky; using damp hands helps with this. Store in an air tight container or ziplock bag. They should be good for up to a week.

  1. Yayy! So glad you liked them. My boss and coworker have decided that I need to keep a full supply of these at work at all times and even suggested using other dried fruits as well for variety. I think I will try 3/4 cup of craisens next time to tone the sweetness down a bit.
